Cucumber Sorbet – Summer Extravaganza

Are you looking for an easy dessert that doesn’t require a bunch of specialty ingredients? Don your chef’s hat and make this Cucumber Sorbet. All you need is some cucumber, ginger, and lime juice. This versatile treat is rich in antioxidants and has no added refined sugars, flavors, or colorings.

Ingredients
  

  • 500 g cucumbers peeled
  • 3 tbsp freshly squeezed lemon juice
  • 1 tbsp ginger juice
  • 1 tbsp pre-soaked chia seeds
  • A few drops of raw honey as a sweetener
  • Mint leaves to garnish

Method
 

  1. Peel cucumbers and cut them into 2-inch pieces. Add them to a food processor with lemon juice, ginger juice, and a few drops of honey.
  2. Process until the mixture turns smooth.
  3. Add the soaked chia seeds and stir well.
  4. Transfer to an airtight container and let it chill in the refrigerator for the next four hours.
  5. Garnish with fresh mint while serving. Enjoy.
