Ragi Malpua: Homemade and Guilt-Free

For the malpua:
- 4 tbsp ragi flour
- 2 tbsp whole wheat khapli flour
- 1 tbsp steel cut oats ground to taste
- 2 tsp organic jaggery powder
- A few tablespoons of coconut milk as per the consistency needed
- A few drops of A2 ghee
For the filling:
- 2 tbsp coconut grated
- 2 tsp melon seeds semi-powdered
- 2 tsp pumpkin seeds semi-powdered
- 2 tsp green cardamom powder
- 2 tsp organic jaggery powder
For the filling:
Dry roast the grated coconut for two minutes. Turn off the heat.
Add the semi-powdered melon seeds, pumpkin seeds, cardamom powder, and jaggery powder.
Mix well and set aside.
For the malpua:
Mix the flour, jaggery powder, and add a few drops of milk to form a runny paste.
Whisk again.
Now take a few drops of A2 ghee in a flat pan.
Take a ladleful of the malpua batter and pour it into the center. Let it brown, and wait until the edges turn golden.
Then flip it and brown the other side.
Take it off the pan before it gets too crisp, or it won't fold.
Fill in with coconut filling.
Serve hot.
- You can alternatively use jowar flour/Amaranth flour/wheat flour as per the availability.
- Ragi is rich in iron, fiber, and calcium.
- Regular consumption of ragi is highly beneficial in dealing with conditions of anxiety, depression, and insomnia.
- Antioxidants, mainly tryptophan and amino acids present in ragi, work as natural relaxants.
