Amla Chyawanprash - For A Desi Immunity Punch

It is time to skip the jars on supermarket shelves and make your very own homemade Chyawanprash! Try this powerful immunity booster that can be consumed by your entire family. Yes, it requires some patience, but the result is worth the effort!

Ingredients
  

  • 2-3 cups of amla or Indian gooseberry
  • 1 cup organic jaggery
  • 5 to 6 tbsp A2 ghee
  • Ground spice mixture
  • 6-8 green cardamom or elaichi
  • 1 tbsp whole black pepper
  • 1 tsp nutmeg
  • 1 bay leaf
  • 1- inch Sri Lankan rolled cinnamon stick
  • 1-2 tbsp fennel seeds or saunf
  • 1 tsp cloves
  • 5-6 strands of saffron or kesar
  • 2 tsp dry ginger powder

Method
 

  1. Wash amlas or Indian gooseberries and pat them dry.
  2. Pressure cook amla for 2 whistles.
  3. Once done, you will be able to easily remove the pits.
  4. Place the pulp in a blender and make a smooth purée. Add 1 tbsp of water to ease grinding.
  5. In a pan, add some ghee and the amla purée.
  6. Keep sautéing for 10 minutes until the ghee begins to separate.
  7. Add jaggery powder to the amla purée.
  8. Keep sautéing until you achieve a thick, sticky, and messy mass.
On the side:
  1. Take the ingredients of the spice mixture, and blend them finely.
  2. Add the ground spice mixture to the pan and mix well.
  3. Add the amla mixture ready as above now and let it cook for another 5 minutes till everything is well combined.
  4. Let it cool down, and transfer it to an airtight jar.
Recipe tips
  1. Eat a spoonful daily to build immunity and stay away from illness.
  2. Children can take it with 1 tbsp of milk too.
  3. The amla jaggery mixture can be used as a jam or spread on rotis or parathas.
  4. It can be stored for 4 months in airtight containers.
  5. Consume 1 to 2 tsp of Chyawanprash with warm water either in the morning on an empty stomach or 2 hours post meals.

Notes

  • A powerful carminative, chyawanprash promotes healthy movement of gasses, regular elimination of waste, and boosts metabolism.
  • Also known as the winter tonic, it helps promote lung power by nourishing the mucous membrane to combat infections and helps keep the respiratory passage clean and clear.
