Tomato Soup – Taste the Magic of Lycopene

Be it our little munchkins or the elderly, soups are generally loved by all without any complaints. Especially during the rainy season, nothing beats the combo of a hot tomato soup teamed up with salads and pasta of choice.The red-hued soup is packed with lycopene and anti-inflammatory ingredients, vitamins, and minerals that boost your immunity with an added dose of warmth, love, and comfort.

Ingredients
  

  • 2 cups tomatoes, pumpkin, and carrots, chopped
  • 1 finely onion, chopped
  • 1 tbsp sattu, roasted
  • 1-2 green chilly
  • 1- inch ginger
  • 3 garlic cloves, crushed
  • 1 tbsp coriander powder
  • ½ tsp turmeric powder
  • 2 Ceylon cinnamon sticks
  • 2 cloves
  • ½ tsp fennel seeds
  • 2 bay leaves
  • 1 tsp cold-pressed coconut oil
  • 2 tbsp coriander leaves
  • ½ tsp peppercorns, crushed
  • Salt as needed

Method
 

  1. Add the tomatoes, pumpkin, and carrot to a pressure cooker and let it cook for 2 whistles.
  2. Remove the vegetables and save that water.
  3. Next, blend them into a fine paste with 1 tbsp roasted sattu. Keep this aside.
  4. In a pan, heat coconut oil. Add cinnamon sticks, cloves, fennel seeds, and bay leaves. Sauté for 30 seconds.
  5. Now add the onions, chilies, garlic, ginger, and pepper. Sauté until golden brown.
  6. Add the tomato puree and the water next. Let it boil.
  7. Add coriander powder and salt. Let it simmer for 5 minutes.
  8. Garnish it with coriander leaves. Serve hot.
Power tip
  1. Adding beetroot and some coconut milk gives it a creamy texture.
  2. You can also add oregano and parsley for an extra earthy flavor.
