
Tomato Soup – Taste the Magic of Lycopene

The red-hued soup is packed with lycopene and anti-inflammatory ingredients, vitamins, and minerals that boost your immunity with an added dose of warmth, love, and comfort.

Ingredients
- 2 cups tomatoes, pumpkin, and carrots, chopped
- 1 finely onion, chopped
- 1 tbsp sattu, roasted
- 1-2 green chilly
- 1- inch ginger
- 3 garlic cloves, crushed
- 1 tbsp coriander powder
- ½ tsp turmeric powder
- 2 Ceylon cinnamon sticks
- 2 cloves
- ½ tsp fennel seeds
- 2 bay leaves
- 1 tsp cold-pressed coconut oil
- 2 tbsp coriander leaves
- ½ tsp peppercorns, crushed
- Salt as needed
Instructions
- Add the tomatoes, pumpkin, and carrot to a pressure cooker and let it cook for 2 whistles.
- Remove the vegetables and save that water.
- Next, blend them into a fine paste with 1 tbsp roasted sattu. Keep this aside.
- In a pan, heat coconut oil. Add cinnamon sticks, cloves, fennel seeds, and bay leaves. Sauté for 30 seconds.
- Now add the onions, chilies, garlic, ginger, and pepper. Sauté until golden brown.
- Add the tomato puree and the water next. Let it boil.
- Add coriander powder and salt. Let it simmer for 5 minutes.
- Garnish it with coriander leaves. Serve hot.
Power tip
- Adding beetroot and some coconut milk gives it a creamy texture.
- You can also add oregano and parsley for an extra earthy flavor.

- Lycopene is a polyphenol or a plant compound that may play a role in lowering the risk of prostate, ovarian, lung, and stomach cancer. It is this compound that gives tomatoes their bright red color.
- Tomatoes are rich in vitamins A, C, and K. They aid smooth digestion and protect you from constipation, diarrhea, and other digestive issues.
