Combine the benefits of the superfoods jowar and sattu with easily available ingredients from the kitchen into these one-bite super cookies. Easy to digest, these can come to your rescue when your tummy craves and growls for a mid-morning munchie.

Ingredients
  

  • 1 cup sorghum flour, jowar flour
  • 1 cup sattu flour
  • 1 tbsp cumin powder, jeera
  • 1 tbsp crushed dry rosemary
  • ¾ cup cold-pressed coconut oil
  • 1 tbsp carom seeds, ajwain
  • 1 ½ tsp salt
  • ¾ cups water

Instructions
 

  • In a bowl, mix sorghum flour, sattu flour, and salt.
  • Warm the oil and add the flour mix to it.
  • Mix cumin powder, crushed rosemary, and carom seeds into it.
  • Boil water in a pan and add the above mix. Use a spoon to mix the flour.
  • Adjust the water depending on the required consistency.
  • Turn off the flame and keep the mix aside for 20 minutes to cool down.
  • Preheat the oven for 10 minutes at 150℃.
  • Meanwhile, using a rolling pin, roll the ball-sized dough into a 1/2-inch thick sheet.
  • Use a knife to cut into desired shapes
  • Bake for 20-30 minutes until they are done.
  • Once done, let them cool completely.
  • Store in airtight containers.

Power tips and variations

  • We can use any other millet flour as per availability.
  • One can add Kasuri methi (dried fenugreek leaves) as per the availability.

Ingredients
  

  • ½ cup sorghum flour, jowar flour
  • ½ cup ragi flour, finger millet flour
  • ¼ cup desiccated coconut
  • ½ teaspoon Ceylon cinnamon powder
  • ½ cup almond milk or A2 milk as per suitability
  • ¼ cup raw cacao powder
  • Raw honey to garnish

Instructions
 

  • Mix all the ingredients in a bowl well with a spatula and beat it to a batter consistency.
  • Heat the pan to medium heat. Lightly grease with a few drops of oil and gently pour the batter.
  • When small bubbles form, flip the pancake over and cook for approximately 10 seconds.
  • Serve hot and garnish with raw honey.

Power tips and variations

  • You can opt to use amaranth flour if jowar flour is unavailable.
  • Leave the batter to rest aside for 30 minutes. It will allow the flour to absorb the liquid and make the pancakes fluffier.
